One of my favorite things to take to a party or other event away from home is rollups made from tortillas. I only have a basic recipe that can be revised to suit the occasion. Here is a green chili rollup.
6 Large Flour Tortillas 2 Each 8 Oz Packages of Creamed Cheese 4 Oz Can Diced Green Chilis 1 Cup Diced Ripe Black Olives 1 Cup Diced Green Olives 1 Cup Shredded Cheddar Cheese
Run tap water over tortillas one at a time to get the wet. Put them on a microwavable plate, cover with another plate (upside down) and microwave on high for about 1 minute, to soften them so they will not crack when rolled up. Mix other ingredients in bowl. It works best if the cream cheese is room temperature or warmed in microwave. Spread mixture on tortillas to about ¼ inch thick and about 1 inch from the outer edge. Rollup each tortilla and place on plate. Refrigerate tortilla for a couple of hours. Slice tortillas into ½ inch thick rounds and arrange on serving plate, stacking in layers. Refrigerate until served.
Tips If you want to make some hot green chili rollups, you should probably make some that are mild too. Put something like pimentos in the mild batch to be able to identify them. Use flavored tortillas for color and additional flavoring. Spinach and tomato flavored tortillas work well. Substitute spinach for chilis. Substitute thin sliced ham for and asparagus. Many possibilities. Decorate serving plate with lettuce parsley etc.

Going to make these for Mother's Day cook out at my sister in law's. I like them with the ham.
