So, what's everyone doing for Easter? What's on your menu. It will be just the two of us, unlike many previous years when we've held huge egg hunts on our acreage. I won't be making as much food as usual but still will be having more than in the pic below. Ron will be making the ham and carrot cake. I'll be making potato salad, deviled eggs, carrots, mashed sweet potatoes, probably asparagus and some sort of rolls. I used to make my own bread when Noelle was still home, would make it in shapes such as bunnies, ducks, etc.

hey ya'll, both dinners sound great,as for me i'll be spending my easter alone, my hubby is going to a friend of his brothers property til monday to turkey hunt and fish. it was supposed to be a trip somewhere else, but the floods down there made them call it off, so he mentioned that his brother suggested the friends place and i told him it was okay to go and to have a good time. i haven't decided what i'm gonna do, but what ever it is i'm gonna enjoy it.

Pombird, I know what you mean about energy, although we do have plenty of space here. I had hoped my daughters would take over the holidays. But, I guess what they now do is just go to their spouse's parents' homes. But, I don't mind, enjoy it being just Ron and me. I love those little Smokies, especially the cheese filled ones. I always keep some in the freezer.
Aha Dreamer, that's probably why the birthday cake and roses--kissing up so he could be gone for Easter. LOL But, I wouldn't mind being alone, would catch up on my reading. I've never really had any time to be alone--other than during the day when Ron is at work. I lived with my parents, then married. When divorced, I still had Rochelle. Then when Ron had to travel so much, I had Noelle. I hope I don't out live Ron. But, if I do, I know I won't mind being alone. I enjoy my own company. LOL

Our Easter will be kind of simple. I am fixing ham, mashed potatoes, black-eyed peas, green bean casserole, macaroni n' cheese, pistachio salad, rolls, pound cake & a chocolate pie. I'm going to fix everything here and then take it over to my mother-in-law's house since she is not able to get out yet. I just found out today though, that his sister and her daughter will be joining us. Originally they were going to be in Indiana where they are going to be moving soon, but she said the plane tickets are too expensive for all of them to go up there this weekend, so her husband was flying to Indiana, and they were going to stay here. All 3 of them just came back about 1 1/2 weeks ago from flying up there trying to find a house for them to live in when they move up there. So, I guess it will be a bigger turn-out than originally planned, but still nothing fancy. We're definitely not breaking out the china and the silver!! LOL ;D

Well Sqwrrl, it doesn't sound like your Easter will be very simple, sounds like a lot of food. Gosh, I can't remember the last time I had chocolate pie. I no longer make the green bean casserole. No one in our family seems to care for it. I make mashed sweet potatoes instead of mashed potatoes because I make potato salad. That's a lot of work making all the food and then transporting it.

Wow, I'm way behind on my posts! LOL
Easter Lunch turned out great! Yes, it was a lot of work to cook everything, load it up and transport it over to my mother-in-law's house, but everything worked out. Of course I could not have done it all without the great help from my husband jumping in there and helping at the last minute when I started getting stressed out that everything wasn't going to be ready on time, plus still having to load it up and driving to her house. It's only a 5 minute, or less, drive, but still I didn't want to be late!

LOL Five minutes or less? It about takes me that long to get out of our 500 foot drive. I've kind of quit even trying to lug food out to our acreage for picnics. I usually do it buffet style inside and then they can take their food outside and eat where they want. We still have some Easter food in the frig. I need to throw it out. I know there is still some asparagus left, not sure what else. It was so great today coming in from working in the yard and having Ron's roast ready in the crock pot. Sounds like you have a husband like mine. Ron is really good about helping in such situations. He certainly never gets stressed out, always cool, calm and collected.

You know, I've never cooked a roast in the crock pot before. I hear it's really good, and really easy to do... just have never tried it. I guess I'll have to try that sometime soon.
Yes, it sounds like my husband is a lot like Ron!! Doesn't hardly ever let anything bother him, always calm about things and doesn't stress out about things like I do! I don't know what I would do without him!!!
